Black Bean Salad Enhanced with Garden Veggies | A Gluten-Free Favorite

Editor’s Note:  Hope you had a terrific week! This is a favorite recipe that I made a couple weeks ago on our vacation in Minnesota (fishing trip).  It keeps well for several days in the fridge. Scott and I like to take the leftovers in our lunches to work. Enjoy!

My mom, my sister, my niece, and several of our friends all eat gluten free, so Scott and I have been learning to prepare a larger variety of dishes that fit in a gluten-free diet. This recipe for Black Bean Salad, from my friend Becca Perry-Hill, is a quick one to make and can be enhanced with fresh veggies from your garden. We have found that this dish is even a bit tastier on the second day after it has been in the refrigerator overnight. I’ll list the ingredients as Becca shared them with me, but I have found that you can switch things around in this recipe to personalize it. For instance, when I made the recipe today, I included garbanzo beans. And the green pepper and tomato were fresh from the garden. Delicious!

Black Bean Salad Enhanced with Garden Veggies | A Gluten-Free Favorite

An easy-to-make salad that is very popular at family gatherings.
  • 1 can black beans, rinsed and drained
  • 1 can of corn, rinsed and drained, or 3-4 ears of fresh corn
  • 1 sweet bell pepper, diced
  • 1 small or ½ large sweet onion, finely diced
  • 1 ripe medium tomato, diced
  • 1-2 jalapeno peppers, finely diced
  • 1 avocado, diced
  • the juice of 1 large lime
  • 3 T olive oil
  • sea salt (or kosher salt) to taste
  • freshly ground black pepper to taste
  1. Gently mix the first 7 ingredients together. Sprinkle lime juice and olive oil over entire salad. Sprinkle on salt and pepper to taste. Gently mix.
